Oilfish (Escolar) (Lepidocybium flavobrunneum)
Brief description
Oilfish (Escolar) (Lepidocybium flavobrunneum) is a species of fish referred to family Gempylidae and is found deep (200-880 m) in tropical and temperate waters around the world. It is also known as snake mackerel and white tuna. Escolar is a large fish with average weight of 20-30 kg. It is widely used for smoking and sashimi, despite of health problems that may occur if consumpted in large portions. Thus it is highly recommended to consume Escolar in limited (max 6 oz) quantities as it may caus kerriorhea (Greek: flow of wax) if eaten too much.

Brief description
Pacific hake (Merluccius productus) is one of the family members of the codfish family genus Merluccidae. In contrast to related species such as pollock and cod, it has two dorsal and one anal fin. It is found in the northeast Pacific Ocean and is most common in the Pacific waters of California, Oregon, Washington, and British Columbia.

Redfish (Sebastes marinus) belongs to the family Scorpaenidae. Redfish lives mainly in cold waters at a considerable depth – from 100 to 500 m.The smallest species of redfish reach a length of 20 cm, and the largest exceed 1 m.In the Norwegian Sea and the Arctic Ocean sea bass commits summer migration. The main fishing nations for Redfish are Norway and Iceland.

Roach (Rutilus rutilus)
Brief description
Roach (Rutilus rutilus) is referred to Cyprinidae family and is found in abundance in lakes and bays of Northern and Central Europe, as well as in Caspian sea, Aral sea and Siberian lakes. The roach is a small fish, with common size of 17 – 35 cm. Maximum length registered was 45 cm. The body has a blueish silvery colour and becomes white at the belly. The fins are red. The common roach eats plant material, bottom dwelling (benthic) invertebrates and plankton. Spawning season is April and May. In Russia dried roach (especially with roe) is one of the most popular snack for beer.

Sardine (Sardina plichardus)
Brief description
Sardine (Sardina pilchardus) is found in the Atlantic Ocean to the Mediterranean Sea and is caught primarily off the coast of Spain, Morocco, Portugal, and along the east coast of South Africa. Sardines are small, silvery pelagic fish very similar in appearance to small herring. Her back bluish-green, sides and belly silvery white, but the color fade quickly after catch, leaving the whole fish silver. Basically sardine grow up to 15-20 cm, rarely up to 25 cm. Catches in the western Mediterranean of about 250 000 tons, and in the northeast Atlantic of 700 000, together with lower production areas contribute to total more than million metric tonnes yearly commercial catch. Sardine is widely used for canning, smoked, frying and preserves production.

Brief description
Sardinella (Sardinella aurita) – is a small pelagic fish. Sardinella is found in abundance in waters Atlantic Ocean to the Mediterranean Sea and is caught primarily off the coast of Spain, Morocco, and along the east coast of South Africa. Common commercial size of Sardinella is 15 – 25 cm, and at weight of 100 – 250 gr. Sardinella is a small, silver fish with bluish-green back and silvery white sides and belly. It inhabits coastal waters to a depth of 100 m, likes clear saline water with a minimum temperature below 24°C. Feeds mainly on zooplankton, especially copepods. Most of Sardinella’s commercial catch is used for canning purposes. Total annual catch accounts for more than 400 000 tones

Southern blue whiting (Micromesistius australis)
Brief description
Southern blue whiting or Polaca (Micromesistius australis) is a bottom-pelagic fish living in temperate and sub-Antarctic waters of the southern hemisphere. In contrast to its Atlantic counterpart (Northern Blue Whiting), it is a valuable table fish. It has a minimum percentage of fat and a dense meat structure. Commercial fishing is almost absent in Argentina and the Falkland Islands, with few exceptions for by-catch. In New Zealand, the season lasts about a month and usually comprises about 50% of the permitted quota. Southern Blue Whiting stock is MSC certified.

Brief description
South Mackerel or Gemfish (Rexea solandri) – belongs to the Gempilidae family, and is a relative of Oilfish and Barracuda. The body is elongated, snake-like, and the meat has a delicate structure complemented by a small number of bones. Commercial catch size starts from 1 kg and above. Ideal for smoking. It is considered as a by-catch fishing species for Australia and New Zealand.
